I’m in complete agreement that food should be fun. We may not be able to have fun cooking or eating every single meal, but let’s do it while we can! Not sure about you, but for me, it seems a hindrance to making and enjoying good food is time. Well, this recipe is one to add to your ‘in a hurry, but want something delicious’ tool-box. Whether for you, or a large batch for friends, this is simple, layered with taste, and still packs some nutrition between the cottage cheese and pistachio addition. Hope you enjoy!

- Toast your bread
- Meanwhile, combine ricotta & cottage cheese. Hand mix or use a food processor to get a smooth consistency.
- Add honey, lemon zest, a splash of lemon juice, and Himalayan sea salt to taste.
- Layed whipped ricotta mixture on toasted bread, drizzle with honey, crushed pistachios, & cardamom.
- Enjoy!

We are shifting into fall, so a timely option is to put fresh figs, pears, or apples on top!
