I don't know about you but pancakes remind me of happy childhood meals or rainy days! Today is a cold rainy day so pancakes and coffee seemed like a no-brainer! I also happened to have a sample box of Kodiak Cakes: Power Cakes and thought I'd give it whirl. This is the kind of mix that is so good that you use the whisk, a spoon, and even your fingers to get every last bit!

As for Kodiak Cakes... This is a brand I will definitely be coming back to. The mix was incredible, the price is affordable, and nourishment is a prominent part of their mission. Today, I used frozen berries from North Carolina, local honey, and bee pollen to give these pancakes a little flair. Berries are always one of my go-to fruits because they are lower in sugar than most, delicious, packed with antioxidants, and it is easy to have a bag in the freezer at all times! As far as, the honey and bee pollen, I've heard that eating local honey regularly can be helpful with allergies. I'm not sure it has helped me but I love the idea of supporting local businesses! Cinnamon Blueberry Protein Pancakes



Prep Time = 5 minutes Cook Time = 10 minutes Total Time = 15 minutes

 Yields: 4 Servings


Description: Pancakes don’t have to be a treat, but can be a delicious part of a healthy diet. Using Kodiak Cakes mix makes it simple to have nourishing, hearty and enjoyable breakfast that you can feel good about. You could just follow the direction on the box, which are below, or add a few local ingredients to make it extra special. Enjoy!



INGREDIENTS:

  • 2 cups of dry Kodiak cake mix
  • 1 cup of liquid
  • 1/2 Tablespoon butter
  • 1 cup of fresh blueberries
  • Honey and/or Bee Pollen for garnish

INSTRUCTIONS:

  1. Combine dry mix and liquid of choice. Mix for about 30 seconds or until clumps are broken up.

  2. Heat non-stick skillet on medium heat. Once warm, butter pan and spoon your mix.

  3. Once top of batter shows small bubbles, add blueberries and flip.

  4. After 3-5 minutes, remove pancakes from skillet, drizzle with honey, a dash of cinnamon & a bit of bee pollen. Enjoy!


Notes: Option to be dairy free by using water or a non-dairy milk substitute. The protein content will adapt based on what you add (i.e. Just water = 14g protein, replace water with milk = 16g protein, replace water with milk and add an egg = 18g protein
