Beet & Radish Tzatziki Tacos
This recipe is adapted from the cookbook "NATURAL: Wholesome Recipes for Pure Nourishment." It was serendipitous how I ended up getting this book. Thanks to Hurricane Irma, some friends of my in-laws 'to-be' were fleeing Miami and ended up in South Carolina. We had a big dinner at our house one night, connected, and found a mutual passion for cooking wholesome foods as well as the power of food to bring loved ones together! Our guests gifted us with this recipe book as a wedding present, and it is now my go-to! Each time that I use it, I reminisce about our time together, a house full of Spanish banter, smiles, and tasty nourishing food. So thank you, Hurricane Irma!
Beets may not be your veggie of choice but don't beet yourself up over it! I chose this meal because I was searching for a recipe using beets. They are one of my favorite foods, are nutrient-packed, and have anti-inflammatory properties (thanks to pigments called betalains). Since inflammation is considered the root of many issues, I take every step possible, whether in my diet or lifestyle, to decrease inflammation. Why not, right? Yields: 4 Servings
INGREDIENTS:
FILLING
- 4 diced beets
- 1 medium cucumber
- 1 cup radishes
- 1 scallion, finely chopped
- 12 small butterhead lettuce leaves
DRESSING
- 1 cup of feta cheese
- 1/4 teaspoon ground cumin
- 1/2 teaspoon honey
- 2 tablespoons finely, chopped fresh mint
- salt and pepper, optional
INSTRUCTIONS:
1. To make the dressing, combine feta, cumin, and honey (stir, blend, or use a food processor). Then, stir in mint and season with salt and pepper, if using.
2. Dice beets and boil for 20 minutes or until soft.
3. While beets boil, dice cucumbers, radishes, & scallions.
4. Once beets are done, you can let them cool, then gently toss everything together.
4. Arrange the lettuce leaves on a plate. Spoon a little of the feta tzatziki into each leaf.
5. Serve immediately and enjoy!
